One of the ways the Irish Wilmingtonain's celebrate Thanksgiving is with this wonderful Turkey Breast. To the Irish and the Wilmingtonains the cherry tree has great meaning. The old Celtic legend goes something like this --- To learn what age you will live to be, walk around a cherry tree nine times and then shake the tree. the number of cherries that fall to the ground will indicate the age you will lie to be.
Whether we Irish Wilmingtonain's still believe in this old Celtic legend or not, we still love to prepare this delicious turkey dinner for Thanksgiving and Christmas. It is also great during the late spring when the cherries are ripe.
1 turkey breast, roasted
1 lb fresh liver sausage
4 tbsp butter melted
1 lb cherries, pitted
3 tbsp brown sugar
3 tbsps water
1/2 tsp basil
1/8 tsp cinnamon
Cut turkey breast into four equal slices. Spread the liver sausage over each slice and place in a casserole dish. It is okay if they touch, but do not overlap each slice. Drizzle butter over each slice and heat in a warm oven. Place cherries in a saucepan with the remaining ingredients. Simmer until fruit is pulpy and then run through a grinder. Pour sauce over the slices and return to the oven for 5 minutes. Serve immediately.
